Total Time:  20 min
Prep:          10 min
Cook:         10 min
Yield:          6 servings
Level:         Easy

Ingredients:
  • 2 eggs (room temperature)
  • 2 tbs sour or heavy cream
  • 2 tbs melted butter
  • 2 1/2 cups a     ll-purpose flour
  • 1 1/2 ounces rum or other alcohol
  • 1/2 tsp salt
  • 1.5 qt deep frying oil (I like to use canola oil)
  • Confectioners' sugar (for dusting)

Directions

 1. Separate egg yolks and whites.

 2. Combine and whisk well eggs yolks with sour or heavy cream.

 3. Add slowly 2 cups of flour, melted butter and rum.

 4. Beat egg whites until stiff.

 5. Gentle combine beaten egg whites with mixture.

 6. Add progressively the rest of the flour.  Watch closely, the mixture should be thick almost like bread or pizza  dough.

 7. While working slam the dough down on the counter, squish, fold and slam several times to aid air.

  8.   Work with half of the dough at a time.

  9.   Roll out the half of the dough as thin as you can.

  11.   Cut into 1-inch-wide strips.

  12.  Cut these strips on the diagonal at 4-inch intervals.

13.  Cut a small slit (1 inch or less) in the center of each piece.

  14.  To form the cookie, take one end and place it through the slit. Then pull to form a bow.

  15.  Heat oil in a large, deep skillet to 350 degrees F.

  16.  Place  5-7 chrusty into skillet. The cookies will sink to the bottom at first then they will puff up and float a couple of seconds later.

  17.  Fry until golden each side. These fry quickly (about 20 second per side), so watch closely.

  18.  Drain on paper towels.

  19.  Dust with confectioners' sugar.
