Broccoli Gratin

Broccoli is a beautiful vegetable, with a distinguished color and flavor which is not always appreciated. However,  it can absorb other flavors. The delicate creamy mixture of eggs, cheese and smoked sausage will create a new essence of this vegetable. I would propose a light, but flavory and intense dry white wine such as Bourgogne Vézelay (France).

Ingredients:
  • 1 pound broccoli, rinsed and trimmed
  • 4 potatoes
  • 2 smoked sausages
  • 1 cup finely shredded Gruyère
  • 4 eggs
  • 2 tbs fraîche crème
  • 2 tsp Dijon mustard
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper

Directions:
  1. Heat oven to 375° F. 
  2. Fill a large saucepan with 1 inch of water and fit with a steamer basket (or fill a large pot with ½ inch of water). Bring to a simmer. Place the broccoli in the steamer basket, cover, and steam until just tender, 3 to 4 minutes; transfer to a large bowl.
  3. Peel potatoes and cut into edges.
  4. Place the potatoes  in the steamer basket, cover, and steam until just tender,10 -13 minutes; transfer to a large bowl.
  5. Score the sausage and cut into 2 inch pieces. 
  6. Arrange the broccoli, potatoes and sausage into a baking dish. 
  7. In a bowl whisk the eggs, fraîche crème and Dijon mustard. 
  8. Season the egg mixture with salt, pepper and whisk well.
  9. Coat broccoli with the egg mixture before sprinkling with the remaining cheese.
  10. Bake for about 25-30 minutes until golden and the center of the gratin has set or the knife inserted comes out clean.
