Grilled potatoes with apples, onion and sausage

If  your time is limited I would recommend this fast dish. It is a sensation of delicate flavor of Herbes de Provence mixed with sweetness of apples and onion and crispiness of sausage. I would recommend  a flowery white wine like Riesling (Alsace,France).

Ingredients:
  • 6 potatoes
  • 1 smoked sausages
  • 1 medium onion, sliced
  • 2-3 gala apples 
  • 1 tsp Herbes de Provence
  • 2 tbs  virgin olive oil
  • 1 tbs chopped fresh parsley
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper

Directions:
  1. Preheat the oven grill to 500 degrees F.
  2. Peel the potatoes, cut them in wedges. Boil them about 10- 12 minutes. To reduce time of preparation you can also bake  them in the microwave.
  3. Wash and cut the apples in half, then quarters, then cut out the core.
  4. Score the sausage and cut into 2 inch pieces. 
  5. Drain the potatoes in a colander.
  6. In a large bowl, combine all ingredients including olive oil. Season with salt, pepper and Herbes de Provence.
  7. Place the ingredients in a single layer on a baking sheet
  8. Put into oven and grill until golden.
  9. Before serving sprinkle with parsley.
