Ingredients:
- 6 potatoes
- 1 smoked sausages
- 1 medium onion, sliced
- 2-3 gala apples
- 1 tsp Herbes de Provence
- 2 tbs virgin olive oil
- 1 tbs chopped fresh parsley
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
Directions:
- Preheat the oven grill to 500 degrees F.
- Peel the potatoes, cut them in wedges. Boil them about 10- 12 minutes. To reduce time of preparation you can also bake them in the microwave.
- Wash and cut the apples in half, then quarters, then cut out the core.
- Score the sausage and cut into 2 inch pieces.
- Drain the potatoes in a colander.
- In a large bowl, combine all ingredients including olive oil. Season with salt, pepper and Herbes de Provence.
- Place the ingredients in a single layer on a baking sheet
- Put into oven and grill until golden.
- Before serving sprinkle with parsley.
