Ingredients:
- 1 roman lettuce
- 1 peer
- 2 mi-hard-boiled eggs
- 8 sun-dried tomatoes
- 1 tbs chopped onion
- 1/2 tbs Dijon mustard
- 2-3 tbs canola oil
- 1 tbs red wine vinegar
- 1/2 tsp salt
- 1/2 tsp pepper
Directions:
- Rinse, dry and cut lettuce into medium size pieces.
- Wash, peel and slice the peer.
- Mi hard-boiled eggs cut into quarters.
- Combine together the canola oil, mustard and vinegar.
- Place the lettuce, egg and peer on a plate.
- Pour the dressing over the lettuce and toss to mix.
- Top with sun-dried tomatoes.
- Season to taste with salt and pepper.
- Serve immediately.
