Spätzle with zucchini and sausage in beer sauce

Spätzle are a type of egg noodle or dumpling of soft texture found in the cuisines of southern Germany and of Austria and Alsace. There are perfect for winter season.

Ingredients:

  • 1/2 of package of spätzle
  • 1 medium zucchini
  • 1 smoked sausages
  • 1/2 medium onion, sliced
  • 2 tbs virgin olive oil
  • 1 tsn salt
  • ½ tsp freshly ground black pepper
  • 1 cup beer
  • ½ crème fraîche
  • ½ tbs flour

Direction:

  1. Heat olive oil in a large sauté pan over moderate heat.
  2. Add sliced sausage and onion. Sauté until sausage is lightly golden and  onions are transparent.
  3. Wash and slice the zucchini.
  4. Drain fat and return mixture to pan.
  5. Add zucchini.
  6. Add beer. Stir and simmer 10-15 minutes to blend flavors.
  7. Season to taste with salt and pepper. 
  8. Meanwhile cook späeztle according to cooking instructions. 
  9. In a separate bowl, combine crème fraîche and flour. Add one half of the hot liquid from the pan. Combine well all ingredients. 
  10. Pour the mixture into th pan over sausage and zucchini.
  11. Stir quickly and remove the pan from the heat.
  12. Drain späetzle and toss immediately with the sauce.

Tips:
  • Use sweet beer like raspberry or pear beer.  You can use also apple cider.  "Sam Adams"  has a cherry beer. I would recommend  "Great White Ale". It's very citrusy and one of the more sweeter beers. The citrusy flavor is perfect with zucchini.
