Steamed buns  - pyzy

These soft yeast steamed buns are know as pyzy or buchty in Polish kitchen. They are delicate and delicious especially with goulash or other meat stew. You can freeze and toast them.

Ingredients:
  • 2 cups all-purpose flour
  • 2 eggs
  • ½ stick of butter
  • 1cup warm milk (110 degrees F / 45 degrees C)
  • 1oz fresh yeast or 2 envelops dry active yeast
  • 2 tbs sugar
  • ½ tsp salt

Directions:

1.  Warm milk with sugar.

2. Mix together yeast, 1/4 cup flour, and 1/2 cup warm milk. Allow to raise the mixture for 10-15 minutes. 
    Yeats must be activated with sugar, flour and milk until it forms a foam.

3.  Sift flour and salt into a large bowl.

4.  Combine the flour mixture with eggs, rest of the milk and raised yeast mixture. 

5.  Stir to combine well all ingredients.

6.  Add melted butter. Stir to combine well all ingredients to make soft dough. You can use a mixer. 

7.  In a warm place let stand covered until double in size, about 30 minutes. 

8.  Place the raised dough onto a floured surface and divide into 18 equal pieces. 

9.  Form each piece into a ball, place on floured surface and cover with tea towel for about 15 minutes.

10.  Bring water to a boil in a big sauce pot steamer, water should still be boiling. Place steam basket.

12.  Transfer as many buns as will comfortably fit onto steam-basket leaving 1 inch between the buns. Cover sauce pot with lid. 
       Steam buns over boiling water for 10 minutes. Be careful before you remove buns, it is hot. Control water level in sauce pot. 
       Continue steaming buns until all are cooked.
